August is the first real harvest month - so we go foraging in the ancient woodland, delving into the folklore of blackberries, elder and rowan along the way. Please note that common hogweed should only be eaten cooked and those with celery allergies should avoid it. Common Hogweed's lookalikes include the invasive ‘Giant Hogweed’, which grows to much greater heights and should not be handled or eaten. If you plan to forage at home, always be 100% sure with your identification and that it is edible.

October. One of the many welsh words for Halloween is 'ysbrydnos' which means 'ghost/spirit night'. The singer describes himself tossing and turning in bed - then all of a sudden the ghost of his late lover appears, and starts conjuring up a fancy suit that floats in the air in front of him that he is to wear to go bury her. Very spooky.

Recipe for Soul Cakes
For 12-15 cakes, you will need:
175g butter
175g caster sugar
3 egg yolks
450g self-raising flour, plus extra for dusting
2 teaspoons mixed spice
A few gratings of nutmeg
About 100ml milk
100g currants, plus a handful more to decorate
Method:
Preheat the oven to 190°C, Gas Mark 5. Cream the butter with the sugar until it is light and fluffy and then beat in the egg yolks, one at a time. In a separate bowl sieve the flour and the spices together and add to the butter mixture along with the currants (reserving those for decoration). Mix all together with a wooden spoon and then add the milk and go in with your hands to pull everything together into a dough.
On a lightly floured surface, roll out the dough to a thickness of around 1cm, and cut out rounds with a biscuit cutter. Make a slight cross indent in the top of each with a palette knife, and then push currants along it. Place the rounds on baking parchment on a baking tray, and bake for 10-15 minutes or until goden. Allow to cool on a rack before eating.

Bonfire toffee apples
Bonfire toffee is the dark toffee rich in black treacle, associated with Bonfire Night and particularly loved in the North of England. It is so hard that it has to be smashed into pieces when made in a tray, but it is slightly easier to eat wrapped around apples on sticks. Only partake if you are confident of your fillings! Any eating apples will work, but those with a sharp or very distinctive flavour will be particularly good. You will need a sugar thermometer.
Makes 8 toffee apples
Ingredients
8 apples
8 sticks (apple tree prunings look great)
Sunflower oil
125ml hot water
450g muscovado sugar
115g black treacle
115g golden syrup
¼ teaspoon cream of tartar
Method
Put the apples into a large bowl, pour a kettle of boiled water over them, and leave for a few minutes to remove the waxy coating that would prevent the toffee from sticking. Pour away the water and pat the apples dry, then remove their stalks and push a stick into each. Put parchment paper on a flat baking tray with baking parchment, and rub it all over with oil. Line a small baking tray with baking parchment, and oil that well, too, ready for any excess toffee.
Gently heat the water and the sugar in a heavy-bottomed saucepan, without stirring (you can swish the pan a little if you need to) until the sugar has dissolved. Oil a bowl and measure the black treacle and golden syrup into it, then pour that into the sugar and water mixture. Add the cream of tartar, and swish again to lightly mix everything. Turn up the heat and bring the mixture to the boil. Continue boiling until it reaches 140 C on the sugar thermometer, sometimes labelled ‘soft crack’ (this may take some time but don’t leave the toffee unattended).
As soon as it reaches that point, remove it from the heat and work quickly to roll your apples in the toffee, letting the excess drip off (you want as thin a coating as possible) and then placing them ‘stick up’ on the oiled parchment. Pour any excess onto the small lined baking tray. Leave to cool completely. The toffee in the small baking tray will have to be smashed into shards with a hammer, in the traditional manner.

February is the second in the series. For this month we explore the Romani name for February, why it is the time for plans and new beginnings, the blue tit’s mating rituals, the migration of the toad and the moons that will grace our night sky. Each of the monthly chapters in Lia’s almanac end with a folk song - for February Lia brings one to life, singing a traditional shanty.
A Recipe for Blood Orange Polenta Drizzle Cake
A sunny cake for a gloomy time of year making use of the fleeting blood orange crop. Catch it while you can (though this will work with naval oranges - or indeed any citrus - the rest of the year).
For the cake
175g caster sugar
4 large eggs
325g fine semolina
200g plain flour
225ml olive oil
2 teaspoons vanilla extract
3 1/2 teaspoons baking powder
Zest of 5 blood oranges and juice of 2
Drizzle, icing and topping
Juice of 3 blood oranges
1 1/2 tablespoons orange flower water
About 4 tablespoons icing sugar
50g pistachios, roughly chopped
Preheat your oven to 200C/gas mark 6 and oil a 23cm cake tin and line with baking parchment. Beat the eggs and sugar together, then add the rest of the cake ingredients and mix until well combined. Pour into the cake tin, smooth down, and bake for between 30-40 minutes, or until it is well risen and golden brown and a cocktail stick inserted into the centre comes out clean. While it is baking prepare the syrup by mixing the juice of two of the oranges plus the flower water with 2 tablespoons icing sugar. When the cake comes out of the oven, leave it in its tin and prick it all over with the cocktail stick. Slowly pour over the syrup and leave to cool. Remove from the tin. Make a thin icing by sifting 2 tablespoons icing sugar into the juice of the final orange plus a little water if needed. Drizzle it over the cake then scatter over the pistachios, and serve.
